We love nothing more at the HOS Office then afternoon tea and Catlin our fabulous Textile designer can often miss out as she is Gluten intolerance so we have started baking some amazing Gluten free treats and we wanted to share this amazing Banana cake gluten free recipe, as super easy to make and super tasty.

Ingredients:
140gram
¾ Castor Sugar
2 eggs lightly beaten
½ cup of milk
1 teaspoon of Vanilla extract
2 cups of gluten free plain flour
2 teaspoons baking powder
¼ teaspoon of baking powder
3 ripe bananas, mashed well a fork.

Preheat oven to 175C. Melt the butter gently in a small saucepan, then cool a little. Add the sugar, eggs, milk and vanilla extract. Stir the dry ingredients in to a wide bowl and pour threw butter mixture in. Stir everything together, adding the mashed bananas, do not over mix or beat the batter. Turn the mixture into a lightly buttered a ring or rectangle tin and bake for 30 mins. The cake should be browned, slightly shrinking from the sides of the tin and a skewer inserted in the middle should come out clean, as this is gluten free you do have to check at 30 mins as you may need a further 5 to 10 minutes.

Variations
Banana and Orange Cake: Add the grated zest of 1 orange to the banana cake batter.

Banana and Coconut Cake: Add ½ cup of desiccated coconut to the banana cake batter.

Banana Muffins: The banana cake batter can also be used as muffins. Preheat the oven at 190 C, lightly butter 12 deep muffin tins and pour in the batter. Cook for 12 to 15 minutes. Cool for 10 minutes in the tin, then turn out a wire rack.
